The Simple Pleasures of Hopkins

I am going to tell you about our time in Hopkins, despite what I said in my last post. We’re not sure what it was about this town that made it so special to us. Perhaps we were just on the same frequency or we were craving its authentic vibe, but something captured and held […]

Sugar Beaches & Seaweed Shakes of Placencia

If a word can be spoken that evokes the essence of the thing or place it is describing, then the word “Placencia”, is it. The sound of the word is as beautiful and exotic as the place itself. Say it out loud and slow: Pla-cen-ci-a.  Gorgeous! We almost skipped stopping in Placencia. Guide books and […]

Hearing the Silence in Punta Gorda on Christmas

The flight to Punta Gorda, or PG Town as they call it, took us over the rolling mountains, citrus fields and streams along the beautiful coastal area of Belize.  The little Cessna plane flew close to the ground, so we could really see the roll of the land and each individual citrus tree. Delectable seafood fare or a death wish? We’re bold enough to try it and see. Caribbean Invasion What is a lionfish?  To me it looks like a combination of a lobster and a firework explosion with a little candy cane striping for drama. It’s beautiful and ugly at the same time. Lionfish is an invasive […]

The best little snack

Chicken Taco Tour of San Pedro, Belize

Step off the main tourist strip to experience one of the cheapest, best little delights that we’ve discovered here in San Pedro, Belize.  Tiny little makeshift stands are set up on the street.  Behind stands a woman that looks like a sweet grandmother and she only sells one thing: chicken tacos.

Chicken Drop Chicken

Chicken Drop in San Pedro

A visit to Ambergris Caye is not complete without the world famous Chicken Drop at Wahoo’s Lounge.  Last night we experienced this phenomenon that entertained adults and children alike.  A combination of chickens, good-hearted gambling and lots of yelling.
